Clary Sage Honey

Clary sage honey is one of our rarest varietals. Our bees gather it from the pink-and-white blossoms of clary sage (Salvia sclarea), an aromatic herb grown on farms in eastern North Carolina. The result is a light amber honey that is smooth, buttery, and mild, with a gentle floral sweetness that sets it apart from our darker honeys. Because clary sage blooms only briefly and in limited plantings, we can bottle this honey only in small batches.
