Gallberry honey comes from the small blossoms of gallberry (Ilex glabra), an evergreen holly also known as inkberry. Our bees gather its nectar among the wetlands and wooded landscapes of Hyde and Bladen counties in eastern North Carolina.
Deep amber in color, our gallberry honey has a mild, smooth flavor and pleasant sweetness. Its gentle taste makes it versatile—enjoy it by the spoonful, stir it into tea, or drizzle it over biscuits, yogurt, oatmeal, or fresh fruit.
